2 medium eggplants
1 cup milk or Half and Half [light cream]
1 cup crushed crackers (Ritz or HI HO)
1 tsp sugar
1/2 tsp vanilla extract
Preheat oven to 350° F. Peel, dice, and simmer the eggplants in salted water until tender (about 10 minutes). Drain and mash. Crush enough Ritz or HI HO crackers to make one cup. Beat eggs until frothy. Fold all ingredients together and bake, uncovered,in 1 quart casserole in 350° oven for 45 minutes. Serve from oven to table, with meat and green vegetable. Delicious. Serves 4 - 6.
