Beef and Eggplant Casserole
- 2 tablespoons butter
- 1/2 cup soft bread crumbs
- 1/8 tsp minced garlic
- 1 tsp minced onion
- 3 tablespoons butter
- 1 pound hamburger or ground chuck
- 2 large eggplants, pared and cubed (about 6 cups)
- 1-1/2 teaspoons salt
- Dash of pepper
- Dash of thyme
- 1 can condensed tomato soup
- 1 cup evaporated milk
- Brown bread crumbs in 2 tablespoons butter; remove from pan and set aside.
- Brown hamburger in 3 tbsp butter. Season with onion and garlic. Add eggplant and the rest of the seasonings; cook over low heat 10 minutes.
- Add soup and milk.
- Turn into casserole; top with buttered bread crumbs.
- Bake in 375° F oven 25 to 30 minutes.
