Recipe: Brandied Almond Squares

Topping

• 1/2 cup butter
• 1/4 cup sugar
• 1/4 cup cognac
• 2 tbsp honey
• 1 tsp almond extract
• 1 cup chopped almonds

Base:

• 1 1/2 cups flour
• 1/2 cup sugar
• 2 tsp baking powder
• 1/2 tsp salt
• 1/2 cup soft butter
• 1 egg, slightly beaten

1. Combine all ingredients of topping in saucepan. Bring to full boil stirring. Set aside to cool slightly.
2. Preheat oven to 350° F.
3. Sift together flour, sugar, baking powder and salt.
4. With pastry blender blend in butter until mixture looks like coarse oatmeal.
5. Add eggs and work mixture till it holds together.
6. Press evenly into 10x15” jellyroll pan and pour topping over. Spread topping evenly over mixture.
7. Bake 20 to 25 minutes or until golden.
8. Cool in pan 15 minutes.
9. Cut into squares and finish cooling on a rack.
