Preheat oven to 350 degrees
Place chicken halves in a shallow baking pan.
Place chicken in oven and cook for 15-20 mins or until water of chicken is absorbed.
Remove chicken from oven.
Sprinkle chicken with salt, pepper and red pepper.
Mix garlic, parsley and oregano together and sprinkle over chicken.
Cover with canned tomatoes and sprinkle with grated Parmesan cheese.
Spread olive oil over chicken.
Return chicken to oven and bake uncovered 1 to 1 1/2hrs, or until tender.
