2 whole boneless chicken breasts
2 slices ginger root, chopped
1 tsp cornstarch
2 tsp soy sauce
1/2 tsp salt
1 cup raw peanuts
1/4 cup canola oil
3 or 4 dried chili peppers
1/2 tsp sugar
1 tsp rice wine vinegar

Marinate chicken in mixture of ginger, cornstarch, soy sauce and salt.
Stir-fry peanuts in oil until golden; remove.
Stir-fry chili peppers in oil for a few minutes; remove and discard.
Stir-fry marinated chicken until golden, about 2 mins.
Add sugar, vinegar and rest of ingredients and heat thoroughly.
