Chicken Santi Andaluza Ingredients

To make Chicken Santi Andaluza

  1. Combine the parsely flakes, garlic powder, and orange juice in a zippered storage bag.
  2. Place chicken into the bag, close, place in refrigerator, and allow to marinate for 2-3 hours.
  3. Remove chicken from marinade, coat with the flour, and place into an non-stick skillet with 2 tbsp canola oil.
  4. Cook to brown chicken on both sides.
  5. Remove excess oil. Allow pan to cool a little, then add butter and wine. Heat until glazed.
  6. Add raisins, almonds, and olives. Cover and simmer for 10-15 minutes or until chicken is done. Don't allow pan to dry out, so add additional water if needed.
