2 cups fresh cranberries
3/4 cup chopped pecans
1 tsp grated orange rind
1 beaten egg
1/3 cup orange juice
1/4 cup water
2 tbsps butter or margarine (melted)
2 cups flour
1 cup plus 2 tbsps sugar
1 3/4 tsps baking powder
1/2 tsp baking soda
1 tsp salt

Preheat oven to 350° F.
Chop, mix and set aside cranberries, pecans and orange rind.
Combine egg, orange juice, water and butter.
Sift together flour, sugar, baking powder, soda and salt.
Stir dry ingredients into orange juice mixture.
Do not overbeat.
Add cranberry mixture and stir only to blend.
Line the bottom of a 9 x 5 inch loaf pan with waxed paper.
Bake at 350° F for 70-80 minutes.
Cool 10 minutes and remove from pan.
