1 cup cranberries, halved 1/2 cup confectioners sugar 3/4 cup stone ground cornmeal 1 cup flour 1/2 cup sugar 3 tsp baking powder 3/4 tsp salt 1 cup milk 1 egg 1 tbsp melted butter
Preheat oven to 425° F. Mix halved cranberries with confectioners sugar. Set aside. Sift and mix dry ingredients. Add milk, eggs, and shortening. Add cranberry mixture. Spoon into a buttered 7" x 10-1/2' rectangular or 9" square pan and bake 20-25 minutes. Serves 8.
