Dinner Rolls II Ingredients

• 2 1/2 tsp dry yeast
• 1/4 cup water
• 1/2 cup hot mashed potatoes
• 1/4 cup butter, softened
• 1/4 cup sugar
• 1 1/2 tsp salt
• 1 cup milk, scalded
• 1 egg
• 4 to 4 1/2 cups flour

To Make Dinner Rolls II

1. Soften yeast in warm water.
2. Combine potatoes, butter, sugar, salt and hot milk.
3. Cool to lukewarm.
4. Add softened yeast and egg.
5. Stir in 2 cups flour, beat well.
6. Stir in remaining flour to make a soft dough.
7. Knead lightly.
8. Cover, and let rise until double in bulk.
9. Punch down and let rest 10 minutes then shape into desired shape and let rise again.
10. Bake 10 to 12 minutes at 400° F.
