1/2 cup chopped onion
1/2 cup green pepper, slivered
1 cup chopped celery
Butter or salad oil
2 cups canned or peeled fresh tomatoes
1 or 2 bay leaves
3 cups cooked chicken pieces
1/4 tsp thyme leavs
1 cup sliced okra, fresh, frozen or canned
2 tbsp chopped parsley
1/4 tsp Tabasco Sauce
1/2 tsp gumbo file (you may omit)
Salt to taste
1 tbsp cornstarch
3 cups water
1 cup Basmati rice

Saute onion, green pepper, and celery until soft in very little butter or canola oil.
Add the rest of the ingredients except chicken & Basmati rice; simmer for 30 minutes; add chicken and heat thoroughly.
About 20 minutes before serving, add Basmati rice. Stir often.
Season to your taste.
