Harvard Beets Ingredients

• 5 pkgs Sweet n Low
• 1 tbsp cornstarch
• 1/2 tsp salt
• dash pepper
• 1 pt red beets - reserve juice
• 1/4 cup vinegar

1. In small saucepan, stir together Sweet n Low, cornstarch, salt and pepper.
2. Measure beet juice and add water to make 2/3 cup of liquid.
3. Gradually stir in liquid and vinegar.
4. Cook, stirring constantly, until mixture thickens and boils.
5. Boil and stir 1 minute.
6. Stir in beets; heat through.
