  1. Cook bacon and drain.
  2. Lightly saute onion in bacon fat.
  3. Add vinegar, salt, pepper, mustard and sugar.
  4. Cook until sugar dissolves.
  5. Beat eggs slightly; into them stir small amount of vinegar mixture.
  6. Slowly pour egg mixture into remaining vinegar.
  7. Stir rapidly over low heat until thickened; do not boil.
  8. Pour over greens (spinach or bibb lettuce), add bacon and toss.
