Preheat oven to 375 degrees
Grease muffin pans
Combine flour, baking powder and salt; set aside.
Cream butter and gradually add 1/2 cup sugar, beating till light and fluffy.
Beat in egg yolks.
Add dry ingredients to butter mixture alternately with lemon juice, mixing just till combined.
Beat egg whites till stiff; gently stir in lemon rind.
Fold into muffin mixture.
Spoon batter into greased muffin pans.
Combine 2 tbsps sugar and cinnamon and sprinkle on top of muffins.
Bake for 20-25 mins.

Servings: About 1 dozen
