McCormick Slow Cookers Loaded Potato Soup

• 3 tablespoons McCormick Slow Cookers Loaded Potato Soup Seasoning Mix
• 6-7 medium potatoes of your choice, peeled and cut into 1/2 inch chunks (about 6 cups)
• 1/2 cup finely chopped onion
• 3 cups chicken stock
• 1/2 cup milk
• 1 1/2 cups shredded Cheddar cheese of your choice, divided in two
• 6 slices cooked bacon, crumbled
• 1/4 cup chopped green onion

1. Place potatoes and finely chopped onion in slow cooker.
2. Whisk McCormick Slow Cookers Loaded Potato Soup Seasoning mix and chicken stock in bowl.
3. Pour over potatoes in slow cooker, stir to evenly coat potatoes.
4. Cover slow cooker and cook for 8 hours on Low or 4 hours on High or until potatoes are tender.
5. Remove slow cooker cover
6. Mash potatoes with a potato masher until desired thickness. 
7. Stir in milk and 1 cup of 1/2 of Cheddar cheese.  Mix throughly.
8. Cover and cook 30 minutes longer on High or until desired consistency.
9. Remove slow cooker cover.
10. Sprinkle with crumbled bacon, chopped green onion, and remaining 1/2 of Cheddar cheese.
11. Top with sour cream, if desired.

Tip: Use 1 package (32oz) frozen diced hash brown potatoes in place of diced fresh potatoes.
