McCormick Rotisserie Chicken Seasoning is a versatile seasoning originally crafted by flavor engineers^TM  at McCormick for the rotisserie chicken restaurant market. Yet, you don't have to have a rotisserie to cook with this seasoning blend.  As a dry rub, simply sprinkle McCormick Rotisserie Chicken Seasoning over whole chicken, chicken pieces, veal or pork, and then bake until done.  Or make a wet rub, season your meat, cover, and bake.

You can use McCormick Rotisserie Chicken Seasoning either as a dry rub, or as a wet marinade. Follow the directions below:

To use Rotisserie Seasoning as a dry rub: Evenly coat 12 pounds of bone in chicken pieces with 1/4 cup rotisserie seasoning. Cover and refrigerate overnight. Evenly coat chicken with another 1/4 cup rotisserie seasoning. Pat on chicken and roast slowly, basting once. Roast at 325° F for 1 to 1 1/2 hours for a conventional oven and 300° F for 1 hour in a convection oven.

 

To use McCormick Rotisserie Seasoning as a wet marinade:
Combine 1/2 cup rotisserie seasoning with 3/4 cup water for each 12 pounds of bone in chicken (about 1 tbsp rotisserie seasoning and 1 oz water per two pounds of chicken). Brush the wet rotisserie seasoning onto both sides of chicken pieces. Cover and marinate overnight. Before roasting, sprinkle 1/4 cup of rotisserie seasoning over chicken. Roast on racks, and baste one time during cooking cycle. Roast at 325° F for 1 to 1 1/2 hours for a conventional oven and 300° F for 1 hour in a convection oven.
