  1. Preheat oven to 375 degrees
  2. Saute mushrooms in oil until wilted.
  3. Stir in parsley and cook until all liquid evaporates.
  4. Remove from heat; stir in cheese and salt.
  5. Cool.
  6. Fill layers of filo dough with mushrooms as if making envelopes.
  7. Place pockets on buttered foil lined baking pan in a single layer.
  8. Chill one hr or more.
  9. Bake for 35-40 mins or until browned.
  10. Serve hot or cold.
