Recipe: Orange, Prune and Apple Stuffing

8 cup fresh bread cubes
3 stalks celery, finely chopped
10 shallots, finely chopped
1/2 cup butter
10 prunes, pitted and sliced
4 apples, peeled and sliced
1 cup fresh orange juice
2 tbsp coarsely shredded orange rind
1 cup chopped parsley
1/2 tsp thyme
1/2 tsp ground sage
2 tsp sea salt
freshly ground black pepper, to taste

Spread bread cubes out to dry for an hour or so before cooking.
Saute celery and shallots in butter until soft and golden. Acid the prunes and apples and cook a few minutes.
Combine this mixture with the bread cubes.
Add remaining ingredients and toss them together lightly but thoroughly.
