Recipe: Pineapple Cheesecake

• Two 8 ounce packages cream cheese
• 2 eggs
• 1/2 cup plus 2 tbsp sugar
• 1/2 cup crush pineapple, drained
• 2 tbsp flour
• 1 cup sour cream
• 2 tsp vanilla

Crust:

• 1 package graham crackers, crushed
• 3 tbsp sugar
• 6 tbsp butter, melted

1. Mix cracker crumbs, sugar, and butter together.
2. Press into a 9" pie pan.
3. Mix together beaten eggs, 1/2 cup sugar, pineapple, flour, and 1 teaspoon vanilla.
4. Blend cream cheese and egg mixture together. Pour into crust.
5. Bake at 375° F. for 20 minutes.
6. Remove and let stand.
7. Combine sour cream, 2 tablespoons sugar, and 1 teaspoon vanilla.
8. Spread over baked filling. Bake at 425° F for 10 minutes.
9. Cool and chill overnight.
