Apple Cake II

• 1 cup cooking oil
• 2 cups sugar
• 3 large eggs
• 2 cups flour
• 2 1/2 tsps baking powder
• 1/2 tsp salt
• 1 tsp cinnamon
• 1 tsp nutmeg
• 1 tsp pure vanilla extract
• 3 cups tart raw apples, chopped
• 2 cups raisins
• 1 cup walnuts, chopped

To make Apple Cake II

1. Preheat oven to 350 degrees.
2. Mix oil, sugar and eggs together.
3. Add remaining dry ingredients and mix thoroughly.
4. Stir in vanilla, apples, raisins and nuts.
5. Pour batter into greased 9 X 12 X 3 inch pan.
6. Bake Apple Cake for 40-45 minutes, or until cake draws away from sides of pan.

Icing for Apple Cake is optional, but here's the one to use if you wish.

• 1 cup brown sugar
• 1/2 stick butter or margarine
• 1/4 cup evaporated milk
• 1 can flaked coconut

1. Combine and simmer until sugar and butter are melted.
2. Pour over warm cake and place under broiler until slightly brown.
