1 cup grated unpeeled zucchini
1 cup sugar
1 egg
1/2 cup canola oil
1-1/2 cups flour
1 tsp ground cinnamon
1/2 tsp sea salt
1/2 tsp baking soda
1/2 tsp ground nutmeg
1/4 tsp baking powder
1/4 tsp grated lemon peel
1/2 cup chopped walnuts

Beat zucchini, sugar, and eggs together.
Add oil, mix well . Stir together dry ingredients and lemon peel. Mix into zucchini mixture. Fold, in walnuts.
Pour into greased 8-1/2 x 4-1/2 x 2-1/2 inch loaf pan.
Bake 325° F for 60-65 minutes.
Cool in pan for 10 minutes.
