Recipe: Roast Chinese Pork or Duck Sauce

- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup sherry or vermouth (or any dry wine)
- 1 clove garlic
- 1/4 tsp ginger
- 1 tsp sesame oil
- Mix all ingredients well.
- Marinate pork loin roast in it for a few hours, then roast 40 minutes per lb in slow oven.
- For duck, omit wine; instead of stuffing, put scallion and fresh ginger in cavity.
