3 cups flour
2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 1/2 tsp ground cinnamon
3/4 cup chopped walnuts
3 eggs
2 cups sugar
1 cup canola oil
2 tsp pure vanilla extract
2 cups coarsely shredded zucchini
1 8 oz can crushed pineapple, well drained

Preheat oven to 350 degrees
Grease and flour 2 loaf pans

1. Beat eggs lightly in a large bowl.
2. Add sugar, oil and vanilla; mix until creamy.
3. Stir in zucchini and pineapple.
4. Combine dry ingredients and add to mixture stirring until thoroughly moistened.
5. Spoon batter into 2 well greased and floured loaf pans.
6. Bake for 1 hr or until done.
7. Cool 10 mins before removing from pans.

Servings: 2 loaves
