Sweet and Sour Spare Ribs I

• 5 pounds spare ribs
• 1-1/4 cups water
• 1/4 cup soy sauce
• 1/2 cup cider vinegar
• 1 tablespoon oyster sauce
• 1-1/4 to 1-1/2 cups sugar
• 1 piece ginger, crushed
• 2 cloves garlic, crushed
• salt and pepper to taste
• cornstarch and water for thickening
  • Combine all ingredients except cornstarch and water.
  • Simmer over medium heat in a covered pot until meat is tender (about 1 hour).
  • Skim top of sauce for excess oil.
  • Add seasonings and thicken with cornstarch and water.
  • Serve over thinly sliced salted daikon and carrots.
