• 3 medium tomatoes
• 1 tbsp snipped parsley
• 1 tsp dried basil, crushed
• 1/4 tsp sea salt
• Dash of ground white pepper
• 1/4 cup sugar
• 1/4 cup canola oil
• 1/4 cup vinegar
• 1 tbsp snipped chives

1. Slice tomatoes into a shallow bowl.
2. In screw-top jar combine remaining ingredients.
3. Cover. Shake and pour over tomatoes.
4. Cover and chill 2-3 hours, spooning marinade over tomatoes occasionally.
5. Drain before serving.
