3 cups mashed sweet potatoes
3 eggs, well beaten
1 tsp pure vanilla extract
1 stick butter, melted

Topping:

1/3 cup butter
2/3 cup brown sugar
1/3 cup flour
1 cup nuts (pecans or walnuts)
1 cup coconut

Preheat oven to 350° F
Mix mashed sweet potatoes, eggs, pure vanilla extract, and butter in large bowl. Pour into casserole dish.
Make topping by melting butter in a saucepan. Stir in sugar, then blend in flour, nuts and coconut.
Pour over casserole.
Bake for 30 minutes.
