- 3 cups mashed sweet potatoes
- 3 eggs, well beaten
- 1 tsp pure vanilla extract
- 1 stick butter, melted
- 1/3 cup butter
- 2/3 cup brown sugar
- 1/3 cup flour
- 1 cup nuts (pecans or walnuts)
- 1 cup coconut
- Preheat oven to 350° F
- Mix mashed sweet potatoes, eggs, pure vanilla extract, and butter in large bowl. Pour into casserole dish.
- Make topping by melting butter in a saucepan. Stir in sugar, then blend in flour, nuts and coconut.
- Pour over casserole.
- Bake for 30 minutes.
