Tofu Chili

• 1 tsp chopped garlic
• 1 cup frozen tofu, thawed mashed, drained and squeezed
• 1 teaspoon chili powder
• 1 cube beef bouillon
• 1 1/2 teaspoons salt
• 1 block tofu, cubed
• 1 teaspoon oregano leaves
• 1 can tomato paste, small
• 1 tablespoon wine vinegar
• 1 can kidney beans
• 1/2 cup water

To make Tofu Chili

1. Heat canola oil and saute onion until tender.
2. Add chopped garlic, tofu and seasoning.
3. Stir in tomato paste and vinegar, cook over low heat few minutes.
4. Add beans and water.

Serve Tofu Chili with Parmesan cheese. You may also add vegetables such as peppers, zucchini, corn, and cabbage to this recipe. Make 4 to 5 servings of Tofu Chili.
