Tortellini and Vegetable Soup Ingredients

• 1 quart chicken stock (or 2 cans low sodium chicken broth)
• 1 carrot, sliced
• 1 stalk celery, diced
• 1 cup cut-up fresh green beans
• 1 tomato, peeled and chopped
• 1/2 tsp oregano
• 9 ounces fresh cheese tortellini
• 1 cup chopped broccoli
• 3 green onions, sliced
• 1/4 cup grated Parmesan

To make Tortellini and Vegetable Soup

1. Bring chicken stock to a boil; add sliced carrot, diced celery, cut green beans, tomato, and oregano leaves.
2. Return to a boil, then immediately reduce heat to low; cook 5 minutes.
3. Add tortellini; return to a boil, then cook on low for 5 more minutes.
4. Add broccoli and green onions.
5. Cook 5 minutes longer.
6. Place Parmesan Cheese in a separate bowl for serving at the table.
7. Serve the Tortellini and Vegetable Soup immediately. Let each person add Parmesean Cheese to top of their bowl of soup.
