Recipe: Yeast Rolls

Recipes using Red Star Yeast

3 cups milk
2 pkgs. (2 tbsp) active dry yeast
2 tbsp. sugar
1/2 cups canola oil
3/4 cups sugar
1 tbsp salt
2 eggs
10 cups sifted unbleached* King Arthur or Pillsbury All-Purpose flour

1. Scald milk; cool to until lukewarm.
2. Activate yeast by adding yeast to milk along with 2 tablespoons sugar. Mix, & let stand 10 minutes.
3. In a large mixing bowl, combine oil, 3/4 cup sugar, salt, eggs and 4 cups flour.
4. Mix at medium speed 2 minutes.
5. Add remaining flour a little at a time until dough becomes soft dough.
6. Place dough in lightly greased bowl. Cover with a damp cloth and let rise at room temperature until doubled, about 1 hour.
7. Punch down dough and divide into 4 portions; shape each portion into 12 pieces and form into balls.
8. Arrange balls in greased 8 inch pan. Repeat with remaining dough.
9. Cover each pan with damp cloth and let rise at room temperature until doubled, about 1 hour.
10. Bake rools at 375 degrees 20 minutes.
11. Remove rolls from pans. Cool on wire racks.

Makes about 4 dozen rolls.

*Unbleached flour is naturally whitened by aging. Bleached flour is chemically treated and may alter taste of foods. Pillsbury and King Arthur All Purpose flours are our favorites for all around use.
