Recipe: Baked Barley and Mushrooms
- 5 tbsp butter
- 1/2 tsp sea salt
- One large onion, finely chopped
- 1/4 tsp white pepper
- 1/4lb mushrooms, thinly sliced
- 2 cups low sodium chicken or beef broth
- 3/4 cup medium pearl barley
- Preheat oven to 350° F.
- Melt butter in heavy 9 to 10" skillet over medium heat.
- Add onion and cook, uncovered, for 3 minutes.
- Add mushrooms and barley; cook, uncovered, for 4 minutes, stirring occasionally.
- Add salt, pepper and broth; bring to a boil.
- Pour mixture into an ungreased 1½-quart casserole and bake, covered, for 35 minutes.
- Stir before serving.
