Use Lawry's Mexican Rice Seasoning Mix to make a delicious Southwestern flavored rice quickly and easily. Lawry's Mexican Rice Seasoning contains NO ADDED MSG.
Directions for making Lawry's Mexican Rice via Oven Method
- In a 400° F oven, lightly brown 2 quarts of RICE (regular or commodity)* in 1 cup SALAD OIL, stirring frequently (approximately 15 minutes).
- Add 1 package LAWRY'S MEXICAN RICE SEASONING and 1 gallon BOILING WATER; blend thoroughly.
- Bake (uncovered 45-55 minutes at 400° F, stirring occasionally.
- Yields approximately 1 3/4 gallons of Mexican Rice.
*If using parboiled rice, omit browning step.
Directions for making Lawry's Mexican Rice via Stovetop Method
- Lightly brown 2 quarts RICE (regular or commodity)* in 1 cup SALAD OIL.
- Add 1 package LAWRY'S MEXICAN RICE SEASONING and 1 gallon BOILING WATER; blend thoroughly.
- Bring to a boil and simmer (covered) for 30 minutes.
- Yields approximately 1 3/4 gallons of Mexican Rice.
*If using parboiled rice, omit browning step.
Stovetop Mexican Rice Recipe for Family Size Portions
- In a 2 quart saucepan combine 1 tbsp SALAD OIL, 3 tbsp LAWRY'S MEXICAN RICE SEASONING and 2 cups WATER.
- Bring to a boil. Add 1 cup RICE.
- Reduce to a simmer, cover, and cook without stirring for 15 - 20 minutes until water is absorbed.
- Let stand 5 minutes before serving.

Serve Lawry's Mexican Rice as a flavorful side dish or as a main course by simply adding cooked chicken or ham.
Recipe Variation - Mexican Rice Casserole
Layer 1 gallon prepared MEXICAN RICE, 1 quart SOUR CREAM and 14 ounces diced GREEN CHILES (top with remaining Mexican Rice); Bake 15-20 minutes at 350° F. Top with grated CHEDDAR CHEESE, chopped PARSLEY and PAPRIKA as desired; Bake 5-10 minutes more until cheese melts.
