Recipe: Fresh Mushroom and Onion Soup

- 2 cup green onions with tops, chopped
- 1 lb fresh mushrooms, cleaned and sliced
- 1/4 tsp white pepper
- 3 cup milk
- 1/2 cup melted butter
- 6 tbsp flour
- 3 cup chicken broth
- 3/4 cup dry white wine
- In a Dutch oven, cook onion in butter until tender 3-4 minutes.
- Add mushrooms and cook 2 minutes more.
- Stir in flour and white pepper.
- Cook over medium heat, stirring constantly, until well blended.
- Gradually add chicken broth and milk.
- Cook and stir until boiling.
- Boil about 1 minute more./li>
- Stir in wine. Serve immediately./li>
