Pork Roast

• 4-5 lb pork roast, bones and rolled
• 1/2 cup sherry
• 1/2 cup soy sauce
• 1 tsp ground ginger
• 2 tbsps dry mustard
• 2 tsps dried thyme
• 2 cloves garlic, chopped

• 10oz jar current jelly
• 2 tbsps sherry
• 1 tbsp soy sauce

1. Preheat oven to 325° F.
2. Rub roast with dry mustard and thyme.
3. Mix sherry, soy sauce, garlic and ginger and pour over roast.
4. Let stand at room temperature, turning meat occasionally.
5. Remove meat from marinade dish and place on rack in baking dish.
6. Roast at 325° F for 2 1/2 hours or 185° F.
7. Stir sauce ingredients together; mix well.
8. Simmer over medium heat for 2 mins.
9. Pass sauce along with the roast when serving.
