  • 2 cups peeled and grated zucchini
  • 4 eggs
  • 2 cups sugar
  • 1 1/4 cups salad oil
  • 1 cup chopped nuts
  • 1 cup raisins
  • 3 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsps cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
    1. Preheat oven to 375 degrees.
    2. Blend zucchini, eggs, sugar and oil.
    3. Add remaining ingredients and mix well with mixer.
    4. Pour into greased and floured loaf pan.
    5. Bake 45 to 60 minutes.
