1 cup fine crushed crackers or cracker crumbs
1/2 cup fine bread crumbs
1 egg, beaten
2 tsp Old Bay Seasoning
1 tbsp mayonnaise
1 tsp dry mustard
2 tsp minced onions

Grate 2 1/2 cups of zucchini into cole slaw cut. Drain in a colandar.
In a large boil combine the remaining ingredients, then add grated zucchini and mix well.
Form into about 8 cakes.
Either fry or broil until light brown. Gently turn and cook other side until brown.
