Roasting spices and seeds develop a more rounded and smooth aroma. In fact, roasting imparts a slight nutty aroma. Along with enhanced flavor, roasting adds depth of color that is both unique and pleasing.
Roasted Curry Spiced Chicken Taco with Tomato-Avocado Salsa Recipe
- 2 Tbsp olive oil
- 2 tbsp lime juice, fresh
- 1 tsp McCormick Garlic Powder
- 1 tsp McCormick Mediterranean Sea Salt
- 1 tbsp McCormick Roasted Curry Powder
- 1/2 tsp McCormick Crushed Red Pepper
- 2 lbs boneless skinless chicken breasts (or thighs), trimmed
- 8 each flour tortillas
- 2 cups lettuce, thinly chopped and sliced
- Combine oil, lime juice, garlic powder, sea salt, curry powder and red pepper.
- Place chicken in reclosable bag, pour marinade over top, and place in refigerator to to marinate for at least 30 minutes (longer for more flavor).
- Grill chicken over medium heat until internal temperature of 165° F is reached.
- Cut chicken into thin strips.
- Assemble taco by placing 1/4 cup of sliced lettuce on each tortilla. Fill with spices Chicken and top with Tomato-Avocado Salsa (recipe below). Fold sides of tortilla over filling.
Tomato-Avocado Salsa Recipe
- 1 cup vine ripened tomatoes, medium, 1/2" chunks
- 1 cup avocados, peeled, 1/2" chunks*
- 2 tbsp red onion, diced small
- 2 tbsp cilantro, fresh, chopped
- 2 tbsp lime juice. fresh
- 1 tsp McCormick Mediterranean Spiced Sea Salt
- 1/2 tsp McCormick Roasted Ground Cumin.
- Mix all ingredients in a bowl. Cover and refrigerate until ready to use.
Ingredients: Spices (including coriander, fenugreek, turmeric and red pepper), and onion.  | |
