August - What is for Dinner

Last night we had fried green tomatoes, corn on the cob and stuffed porkchops. We had leftover chocolate truffle cheesecake for dessert.
I have no clue what I am making Tuesday.
 
Sunday we had

Cold home made veg soup with creme fresh.

Venison braised in cranberry sauce, runner bean, Jersey Potatoes and broccoli.

Monday was

Salmon with dill
Fresh tomatoes
Bread and butter, well it's not butter is olive oil marg, not as nice but it is supposed to make us live longer.

Today being a week day a much more mediocre fare I'm afraid.

Grilled Lamb
Lime rice with coriander.
Tinned sweetcorn nibblets.

We were planning on a BBQ but the weather is atrocious.
 
Tonight we are roasting a whole chicken stuffed with a fistful of herbs (Sage, Thyme, and Rosemary cut out of the garden), baked potatoes and vegetable TBD..
 
I made Ethiopian again.

Vegetable Wat

Mesir Wat

Berbere Chicken

Fresh Ethiopian cheese

Ethiopian chopped salad

Injera

Rice pudding with almonds and rose water
 
I made meat-loaf for today and salad with black olives & chic-peas.

Tonight I made for Wed. dinner, Jambalia with smoked turkey sasage cut-up into small rounds. with 2 Red bell Peppers diced up & 2 cloves of fresh garlic, minced. I had a taste :p Yum!! Cookie :)
 
Everyone's meals sound so yummy!

I painted 4 rooms on my days off and didn't cook at all.

First day I threw together a favorite chicken & dumpling soup that I dipped out of the crock pot all day long... made from all store-bought packaged foods: A picked rotisserie deli-hen, canned chicken and dumplings, canned chicken stock and frozen veggies.

Second day I just had several PB&J's all day long- made them as I was covered in paint!
 
That's another thing we do not have in Wales is meat loaf.

Would you please post a recipe for it. Could you tell me how you serve it, hot or cold and what accompanyments would you serve.

I'm facinated by the sound of it.
 
My version of meatloaf recipe is:

1 + lbs of hamburger meat (GROUNDBEEF)
1 egg
1/4 c. oatmeal
1/4 c. breadcrumbs
1/8 c. milk
2 tbsp. prepared mustard
2 tbsp. ketchup
splash each of soy sauce & worstershire
1/8 cup (each) of chopped onion & bellpepper
2 tsp. dried parsley
salt & pepper to taste
generous dash of Lawry's seasoned salt

Mix all ing. in a deep bowl until well blended. Place into a bread pan & bake 1 hour at 350 degrees.

Then 15 min.'s before pulling out of oven mix together several tbsp. of ketchup, a generous squirt of mustard, and 2 tabsp. of brown sugar mix well and coat top of meatloaf with it, continue to cook for last 15 min's. The glaze will be nice and bubbly. Remove from bread pan to serving platter, let cool a few min's and slice & serve HOT!!!


Now a little education on meatloaf for you Keziah!!!

It is wondeful served hot, slice the loaf into about 3/4 inch to 1 inch slices to serve. I like mine best with buttered mashed potatoes, and green beans- but rice or any vegetable would be fine!

NOW the really wonderful thing about meatloaf is cold slices make FABULOUS sandwiched!!!:) I use 2 pieces of bread, a little mayonaise and ketchup spread on each slice of bread lay a thin slice of meatloaf between the two pieces of bread add a little salt & pepper to taste and VIOLA a delicious tasting sandwich!!!

MEATLOAF IS WONDERFUL AND EASY TO MAKE AND DOES NOT COST A FORTUNE TO MAKE!!! I LOVE MEATLOAF----YUMMY:p
 
I made green beans with a little bacon cooked in them served with smothered fried chicken breasts over yukon gold garlic mashed potatoes and cornbread.
 
Meatloaf is indeed a wonderful traditional dish, here Keziah- and I HIGHLY recommend it! It's delicious hot as a entree served w/ either Macaroni & Cheese and Green Beans- OR w/ Mashed Potatoes & Gravy... OR COLD leftovers the next day, sliced and sandwiched onto bread w/ mayonnaise. YUM! :)

Tonight's supper was EXTRA-SIMPLE: a cheese, bacon & onion omelet, lyonnaise potatoes and buttered rye toast w/ grape jam.
 
I'm going to give this one a try.

I am salivating just reading the recipe. I'll let you know how I get on.;)
 
Meat-Loaf Recipe

I made for dinner, Ginger vinegared salmon (marinated 2-hrs.) with potatoes steak fries w/ olive oil and seasonings with a big salad w/ Cesar dressing mixed in. Cookie :)

Here is my meat-loaf recipe I did the other night.....

1 lb of meat-loaf mix ground (pork,ground beef)
1/2 pkg. French's Meat-Loaf Seasoning Mix
1/3 cup skim milk
1 egg
2 Tbsp. grated parmesan cheese
1 small onion chopped
1 fresh Red Bell Pepper chopped

* Makes 3 Good servings. Prep Time 10 Min.
Bake at 350 for 35- min.

Today I am doing some simple grilled steaks with sauteed mushrooms.
Tomorrow I am making rigatoni with sweet italian sausage and tomato sauce plus fried ravioli and garlic toast. For dessert I will be making orange crush cake. We are taking it all to Jon's Dads to have dinner with him.
 
Saturday's Dinner....

Tonight for dinner we had Grilled Steak & Garlic Cheddar Mashed Potatoes w/ Salad, vinaigrette dressing. and mixed veggies. Have A Good Weekend, Cookie :)
 
Supper on the patio at sis's tonight was grilled flank steak, baked potatos on the grill split w/ a thick onion-slice in the middle, and platters of sliced 'maters and buttered sweet corn- YUM! Oh, and 7-Up Floats for dessert!
 
Today I felt like getting in the kitchen and throwing down!!! So I made a smorgasboard of all my favorites:

Moroccan Kefta Tagine Meatballs with Lemon & Cilantro made into little sandwiches on thick French Bread slices.
Pan-Fried Shrimp with Ginger, Cumin & Paprika
Potato Salad
Fried Green Tomatoes
Sauteed Cabbage
Chocolate Chip Cookies>>>>>>

I am so happy:)
 
Tuesday's Dinner was Italian marinated chicken breasts lightly breaded, cooked in the oven at 350 35 min. My side dish was 4-cheese mashed potatoes.
