Chocolate Mint Cookie Recipe
- 1 cup softened butter
- 1 cup sugar
- 1 egg
- 1 tbsp Pure Vanilla Extract
- 1 tsp Pure Peppermint Extract
- 2 cups flour
- 1/2 cup cocoa powder
- 1/4 tsp salt
- 2/3 cup chocolate chips
- Cream together the butter, and sugar until light and fluffy.
- Add egg, and beat well.
- Blend in the Vanilla Extract and Peppermint Extract.
- In another mixing bowl, combine the flour, cocoa powder, and salt. Blend together, then mix into the creamed butter sugar mixture.
- Gently stir in the chocolate chips.
- Drop batter by the tablespoonful onto an ungreased cookie sheet.
- Bake for 10 - 12 minutes or until cookies are golden brown.
Recipe makes about 36 Chocolate Mint Cookies.
Peppermint Frosting
Add 1/4 tsp Pure Peppermint Extract to 2 cups Vanilla frosting.
