Arrowroot is white in color with a bland aroma and a mild, starchy taste. Arrowroot Powder is the ground root of the plant Maranta arundenaced, whose origin is Saint Vincent Island in the Caribbean.
Arrowroot is used when a crystal clear sauce or glaze is desired or in thickening fruit and fruit juices. It has twice the thickening power of wheat flour and the same as cornstarch. The thickening properties are reduced with long cooking so add to recipes shortly before serving. Add as a thin paste of Arrowroot mixed with water. Substitute 1 tablespoon Arrowroot for 2 tablespoons flour; use same amount as cornstarch. Don't use arrowroot for gravies because it does not brown. Maximum thickening occurs just before boiling temperature is reached.
