I'm feeling a little better so I'm making dinner and besides if I lay down all day I get a huge headache. I'm making Chicken dijon with broccoli and parsley potates. Easy and healthy.

I didn't cook today, went out for a Mexican Buffet and had a Margarita on the rocks with salt on the rim and a twist of lime!! Cookie

I learned a new trick and I just love it. If you use a homemade or good quality butternut squash soup for the base of your mac and cheese you only have to add a small amount of really good sharp cheddar to do a wonderful healthy mac and cheese. That is what we are having for dinner with a nice salad on the side.
