Mustard is unlike most other aromatic spices in that ground mustard has no aroma when dry. Ground mustard must be moistened for at least 10 minutes to develop its sharp, hot, tangy flavor. Mustard is derived from from the herb Brassica hirta that produces white or yellow seeds.
