How about a new thread. It is a new month and the other is very long :)

Beef roast, mashed potatoes with beef gravy, green beans and biscuits.
 
OK I had to forgo my Margarita's (my cold makes me NOT feel like having a few:() and so I had Philly Cheese Steak Sandwichws 2 of 'em! And Strawberry Shortcake!!! M-m-m-m

OK Janie good idear start a new thread I will go post there!!!
 
I made Beef Taco's with chili and salsa, topped with sour cream, and sharp cheddar I used corn shells. Cookie :)
 
Well, I'm sorry to say I did no celebrating! At least not celebrating w/ Cinco de Mayo in mind, anyway.

I got roped into assisting a friend who coaches a girls track team. I spent the day outdoors getting sunburned, drinking sodas, eating snow-cones, popcorn & hotdogs at the day-long tournament! But it was fun- and the grub was yummy, as far as park-food goes!

Chicken recipe

This is a chicken dish I'm making tonight.....

Maggie's Jamin Chicken

4 breast of chicken, cooked and then add:
1 t salt
1/2 t pepper
1 lemon, juiced
3/4 cup peach jam 4 garlic cloves (stir jam & garlic together)



My side dish is Garlic Mashed Potatoes.

I made a salad with fresh mushrooms and ranch dressing tonight, 2 almond cookies for desert.

My chicken dish I made last night with peach jam & garlic turned out really Good! Cookie :)
 
I haven't been cooking much this week. While I was in Mexico my company had layoffs. The layoffs in my department mean I have to work a lot more evening shifts so I'm not home to cook dinner. I made a big pot of pasta with roast chicken, tomatoes and corn put it in individual containers and that has been my dinner. Today though I made suppa de lima inspired by my trip to Mexico. That is what I will have for dinner tonight.
 
Pasta

I made whole wheat angel hair with mushroom Alfredo and Hot Italian sausage, Garlic bread. Cookie :)
 
Tomorrow I work a double-shift and will only have time to shower and sleep, so tonight I made a large bowl of tuna-pasta salad to fast-grab for my next half-dozen meals, in a hurry. Mixed-up a whole lb. of cooked ziti, tuna and a splash of lemon, dill, chopped tomato, cuke, broccoli florettes, ripe olives, and some cucumber-ranch dressing. Purty yummy!
 
Tonight after work I'm going to do a fast dinner on the grill. Grilled sausages and grilled marinated zucchini with a nice sauvignon blanc. I'm so glad it's warm enough to sit on the deck for dinner again.

I am sorry about the turn of events at your job and the pressure it is putting on you. I hope things will be OK and that you'll weather the storm. I hate to read things like that, especially when it cuts into your home life and spending time with your hubby and cooking!
 
Cookie, I had a pair of split hot-dogs w/ a coupla fried over-hard eggs for breakfast this morning- YUM!

And jfain- I second Cathy's kind remarks about your work situation. Best and hopeful wishes for that...
 
Thanks guys but I just have to remember the people who were laid off have it worse than I do. My heart goes out to them.

Last night after work though I made myself a portabello mushroom sandwich with roasted garlic mayo and blue cheese and washed it down with a nice glass of red wine. That was a great way to end my work week. Today I have a day off so I'm going to plant the seedlings I've had growing from seed in our little green house.
